Passover: Cheese-Filled Matzot



Passover is coming and with it comes this wonderful dish. It's enough to justify all the grueling work and cleaning before Passover. Check it out!

 



Preparation Time: 30-40 minutes 

Frying Time: 10-15 minutes

I love Passover - the Haggadah, the story of the exodus, the departure from slavery to freedom, the opportunity to meet beloved people at a table set above, when the kitchen smells of heavenly smells. 

 

This is a simple recipe. Cut the matzot into small rectangles, make sandwiches stuffed with a cheese mixture, dip the sandwich in the egg mixture, and then slowly fry it in oil and a little butter. 

 

The result is supposed to be very soft and cheesy, a kind of combination between cheesecakes and French toast, sometimes with a little crunch on the edges. 

 

 

INGREDIENTS 

Recipe makes 12 servings 

  

4 matzos 

2 eggs 

 ½ cup of milk 

90 g (about 3 tablespoons) of 9% cheese    

20 grams (2 heaping teaspoons) of sour cream 

50g thinly grated yellow cheese (you can substitute other hard cheeses) 

40 grams of thinly grated salty cheese 

salt, black pepper 

oil and a little butter for frying 

 

PREPARATION 

1. Wash each matzah under the tap for a few seconds and set aside for 5-10 minutes until the matzah absorbs the water and softens. 

 

2. Meanwhile, prepare the filling: Mix the cheeses, add a little bit of ground black pepper. The mixture should be slightly saltier than you want the end result to be. 

 

3. Divide each matzah in half and cross into 3. It is recommended to use a sharp knife and use a ruler (which you should first rinse with liquid for washing dishes and dry well). 

 

4. Make a sandwich from 2 matzah rectangles.

Leave margins and use them to tighten and paste the sandwich, much like ravioli. Repeat operation with the other matzah rectangles.

 

 

 

 

 

5. Beat the eggs with the milk and a pinch of salt. Dip each sandwich into the mixture, and then shake lightly to remove excess egg mixture.

 

Fry until nicely golden over a small flame in a nonstick pan with oil and a little butter. Transfer to a plate lined with absorbent paper. 

 

6. Serve with sour cream and / or white cheese and olives or pickles.
