Raisin Bread in the Bread Machine

This is fantastic both pre- and post-fast! Easy to make, tasty, healthy and filling. This recipe can also be made without a bread machine.

The hidden secret of the pre-fast meal is complex carbohydrates. While white flour goes right through you, and then makes you crash, whole starches keep you full for longer and keep your blood sugar balanced for the long haul. Good to know in general, and crucial to know before a fast! And although people talk about the importance of protein before a fast, I found that it goes through me too fast.

I prefer a high protein, high salt early lunch, followed by water-filled fruits like grapes and watermelon as snacks, and then the last meal is all 80% or 100% grains (bread, whole wheat pasta, etc.) with just a little bit of protein, and a little bit of starchy vegetables like sweet potatoes and potatoes. I love doing pasta with salmon with sweet potatoes and just a bit of olive oil and no salt.

But mostly, I just eat this bread!

INGREDIENTS

½ cup water – 360ml

2 Tbsp apple juice

Tbsp parve milk substitute, or coconut water, or coconut powder

Tbsp oil

Tbsp sugar (healthy recommendation – use honey instead!)

2 tsp salt

1 tsp cinnamon

4 cups flour

2 tsp yeast (overflowing if using whole wheat flour)

¾ cup raisins (I prefer golden)

DIRECTIONS

1. Put all ingredients except the raisins into the bread machine in the order above.

2. Just get it up! Then you have half an hour to soak and check the raisins at the beep (usually 30 minutes into the cycle). You can even add them in while it’s sitting after the initial knead if you don’t want to worry about being there at exactly the right moment. And it can be a bit late too – it will still work as long as it’s close to the beep and while the machine is still kneading.
