Broccoli Kugel

This broccoli kugel (casserole) is simple, yet tasty and a sure favorite for Shabbat or weekday! A great way to get kids to eat their vegetables!

Kugel is Yiddish for “casserole,” also known as a pashtida in Hebrew. They come in all sorts of colors and flavors, but the one thing that combines them, is some sort of vegetable, mixed with eggs, and baked. 

 

INGREDIENTS 

1 (2 pound) bag of frozen Broccoli (cuts or florets) 

4 eggs 

½ cup mayonnaise 

1½ tsp salt 

¼ tsp pepper 

Pinch of chili pepper (optional)  

 

PREPARATION 

Defrost broccoli and blend in a food processor. Mix in the rest of the ingredients and pour into 9×13 pan. Bake for 1 hour.
