Stir Fried Chicken and Rice With Spring Vegetables

This one-pan recipe for stir fried chicken and veggies makes the perfect meal. Few recipes are easier to throw together for a quick dinner than a stir-fry.

INGREDIENTS 

(Recipe makes 4 servings) 

 

 

1½ pound chicken breasts (2-3), boneless and skinless, cut into ¼-inch slices 

¼ cup soy sauce 

1 tablespoon sesame oil 

2 tablespoons + 1 teaspoon vegetable oil (divided) 

2 eggs, lightly beaten with 1 teaspoon water 

1 cup sliced shitake mushrooms 

1 bunch scallions, sliced in ¼-inch pieces 

3 tablespoon rice wine vinegar 

2 tablespoon Worcestershire sauce (be sure to use the parve sauce and not the sause with anchovies)  

3 cup cooked white long grain rice 

1 16-ounce bag frozen peas, thawed 

1 tablespoon toasted sesame seeds 

 

PREPARATION 

  1. 1. In large bowl, combine soy sauce and sesame oil.  Add chicken and stir to combine.  Set aside to marinate.

  2. 2. Heat a 10-12-inch skillet over medium heat.  Add 1 teaspoon vegetable oil to pan.

  2. 3. Add eggs, and then swirl and flip to form omelet.  Remove omelet from pan, roll into tube and slice into thin slices.  Set to the side.

  2. 4. Heat large sauté pan or wok over medium heat.  Add 1 tablespoon vegetable oil.

  2. 5. Add chicken and toss until cooked through, about 5 minutes.

  2. 6. Add 1 tablespoon vegetable oil to pan and heat.

  2. 7. Add mushrooms and sauté, stirring until browned.

  2. 8. Add scallions and sauté 2 minutes.

  2. 9. Add vinegar and Worcestershire sauce to vegetables.   

 

10.Add rice and toss, heating thoroughly, about 4 minutes.   

 

11.Add peas and return chicken to pan.   

 

12.Add reserved egg, warm through and serve immediately.
